Crave-worthy side: Shiitake Shredded Potatoes

Who doesn't love a warm and creamy potato side dish? And if you thought it couldn't get any better, shiitake mushrooms add a depth of flavor that takes the dish from yummy to you-have-to-share-this-recipe amazing. Most shredded potato dishes call for canned cream of mushroom soup, but why go simple when you can go stunning? Instead of a slight background flavor, the shiitakes take the whole dish upscale. (You don't have to tell anyone, but this is super easy too!) It's the perfect compliment to baked chicken or other main dishes, and is also hearty enough to be a main dish - just add a salad.

The cornflake topping, another very easy step, adds a golden garnish with the perfect amount of crunch to go with the melt-in-your-mouth potatoes. Make this to take to those events where the conversation will turn to: "Who brought those incredible potatoes?"
