8 slices French bread, thick-sliced
4 eggs
1 1/2 cups evaporated milk
1 tsp vanilla
1/4 cup sugar (optional)
Fresh berries, powdered sugar for topping
Persimmon Hill Farm Blueberry, Blackberry or Raspberry Syrup
Prepare a baking dish by generously spraying with pan spray and preheat oven to 350 degrees.
Lightly toast the bread slices (or leave them out uncovered for 8 hours or so) so they will soak up the egg mixture. In a medium-sized bowl, mix together eggs, evaporated milk, vanilla and sugar. Dip each slice in the egg mixture and arrange in an overlapping pattern in the dish. Pour the remaining egg mixture over the bread. Cover loosely with aluminum foil and bake for about 30 minutes or until egg mixture is set. Sprinkle with fresh berries, if available, and dust with powdered sugar. Serve warm with Persimmon Hill Farm Blueberry, Blackberry or Raspberry Syrup.
