Fresh Shiitake Mushrooms, stems removed
3 T. butter
Garlic salt or Cajun Seasoning
Buns
Fresh tomatoes, sliced
Romaine lettuce
Cheese slices, such as provolone, colby-jack or cheddar
Mayonnaise to taste
If you're cooking on a grill, prepare medium hot coals. Dip shiitake caps in melted butter, then place on the grill, cap-sides up, and sprinkle with garlic salt or Cajun seasoning, like Tony Cachere's. Grill for 3-4 minutes, then turn over and cook an additional couple of minutes until the edges of the mushrooms start to crisp. You can also cook the mushrooms in a pan over low heat: saute cap-side up first and sprinkle with seasoning, then turn and cook until edges crisp. Serve on toasted buns, with cheese, sliced tomatoes, lettuce and mayo (I use light mayo) to taste.
